  • January 17, 2001 NEWS Blue Squirrel Reopens Doors After Renovations By Eric Newsom Staff Writer Alan Berkow wants people to know that after over two months of being closed his Blue Squirrel Cafe is ready for business. With repairs to septic systems behind it, the Blue Squirrel has reopened its doors and is slowly but surely regaining regular customers. "There was a day when I had everything packed up, and I was going to get a U-Haul to take it all away," said Berkow. "But what could have ended up being a nightmare has turned into a very special thing with everyone's concern, interests, and I think even their prayers. The customers have been so helpful. It really has been a miracle." Problems arose last fall when the small restaurant, packed wall to wall with blues and jazz music memorabilia, was shut down for sanitation problems resulting from a faulty septic system. Berkow made his way through the red tape to get the proper repairs done, and the Blue Squirrel started serving again on Jan. 11 despite having only the ability to make 75 percent of the menu. "I couldn't wait until I had everything ready. I'm just too excited," he said. "It's great to be able to wake up and fight - to believe in something, to believe in this place." Berkow is working to get his restaurant back to full speed despite some minor setbacks. He says that the community has gone well out of their way to help get the cafe on its feet. "They repossessed my Coke machine, so I'm working to get some other drinks in here ... Dr. Browns, black cherry, check. The customers have been great." Many customers missed the restaurant during its period of forced photo by Eric Newsome Patrons enjoy a meal at the transformed Blue Squirrel and Voodoo Rain," he said. "A guy came in the other day, asked for coffee, and I had to tell him that they took my coffee machine. He wrote me a $400 renovation. "Oh God, we missed this place bad," said graduate student Nancy Baldwin, who was making her first visit since the reopening. "We came by several times hoping that it would be open, and we got lucky this time." "We pretty much lived here as undergraduates," said Tricia Singleton. "We'd come here usually at least twice a week." The main focus of the restaurant is on keeping things organic, and keeping a good atmosphere between employees and customers. The restaurant's menu includes veggie burgers, wraps, focaccia pizzas, and soups and salads. "Everybody's doing cheeseburgers and fries nowadays, and I wanted to do something different so I just went on faith," said Berkow. "A lot of people thought I was nuts, and here I am still open three years later. I'm either crazy, or I'm in love with this place. Most people would say that I'm both." College of Business Receives Full Reaccreditation OPI The College of Business at Western Carolina University has received notice of full reaccreditation by the Accreditation Council of AACSB - The International Association for Management Education, the nation's premier accrediting agency for bachelor's, master's and doctoral degree programs in business administration and accounting. The reaccreditation was approved at the annual meeting of the AACSB board of directors held earlier this month in St. Louis, and comes after an intensive peer review of Western's programs in business education conducted by a team of educators from other AACSB institutions. The team's report noted several areas of strength within Western's College of Business, Larry E. Penley, chairman of the AACSB board of directors, said in a letter announcing approval of reaccreditation. Those areas of strength include widespread commitment to excellence in teaching within the faculty of the college; extensive teamwork in the innovative redesign of an online master's degree program in project management; the development of professional selling and entrepreneurship programs; continuous improvement processes initiated through the leadership of Ron Shiffler, dean of the college; an "impressive, influential and committed advisory board"; and students and graduates who "are very positive about their experiences in the College of Business and especially complimentary of the faculty and their interest in them." Accreditation by AACSB is designed to ensure quality and promote excellence and continuous improvement in undergraduate and graduate education for business administration and accounting. It is a process of voluntary, non-governmental review of educational institutions and programs. Western's programs first received accreditation in 1983, and have received full reaccreditation ever since. Of the some 1,200 U.S. universities and colleges offering business education programs, only 398 are accredited by AACSB. "Meeting or exceeding all AACSB standards means students, alumni and employers can be assured that our undergraduate and graduate degree programs are of the highest quality and that we are committed to a process of continuous improvement," said Shiffler. An example of improvement efforts, he said, is the recent introduction of a new degree program in entrepreneurship to help address the need for regional economic development in Western North Carolina. "Earning reaccreditation means that we passed a thorough audit' by the AACSB, and that we can move ahead with our plans for growth," Shiffler said.
