  • FEATURES August 25,1999 Karen White: University Nutritionist by Holly Rhodarmer Staff Writer Karen White, who works as a part time professor will now be offering her expertise as a nutritionist. This is the first time Western has offered this service. Previously when a student needed the advice of a nutritionist they were referred to a faculty member. There soon proved to be more student needs than faculty assistance. White, who began teaching at Western in fall of 1998, is able to devote much of her time to the nutrition needs of the campus. Her office is located in the graham infirmary. White attended the University of Massachusetts, and studied for her graduate degree at the University of Arkansas for Medical Nutrition. She later worked with the University of Arkansas and the local Children's hospital as a research assistance. She has also taught at the community college level. At Western she has been working with the cafeteria, assessing the nutritional value of the menus. She hopes to provide comprehensive nutrition charts, which will list low calorie and low fat options. She is active on the Food Service Advisory Committee, which works to improve the cafeteria's service. White says student involvement is desperately needed on the committee. Change in the quality of the cafeteria's food can only transpire with student input. White will fill a much-needed position at Western. She hopes to offer individual consultations to students. She can provide nutrition assessments to anyone interested as well as offer nutrition plans. White also can help plan diets for those who suffer from chronic diseases, or fear they are at high risk for other genetic diseases. She can also offer healthy diet plans to students who wish to lose weight, as well as those who suffer from eating disorders. Athletes who need to gain weight, or simply want a healthier diet can also benefit from her services. White plans to circulate targeting spe- Karen White *B£? She is also planning to start a nutrition committee comprised of students, faculty and staff. The committee will work on creating a newsletter to make students aware of their own nutrition habits, and changes they can make to improve their diet and lifestyle. White wants everyone to be on the lookoiut for a nutrition survey that is to be mailed to students soon. Her Web page, which is currently under construction, will contain helpful hints and nutrition facts of the day. She also hopes to incorporate a question and answer section. White encourages all students to contact her. With the input of students, White can help create a more nutritionally aware environment.
