Mr. Horace Kephart, Bryson City, N.C, Dear Sir: We are in receipt of your favor of the 9ta« We are advised that our shipping department has forwarded you three one-pound cans of Evaporated Egg that you requested. We trust it will reach you in due season and in good shape. We note your statement that you understand that our Bakers' Egg consists chiefly of wholly of Evaporated Yolk. You are mistaken in this* To some of the goods we add a little extra yolk, but the greater portion of our product is just straight evaporated whole egg as it comes from the shell. Answering your inquiry as to whether or not we put up dried albumen, will state that we do not. We found that we could not competenwith the Russian and Chinese albumen that was being brought over to this country* Eggs in China can be had on the basis of about k$ per dozen, whereas, we have to pay about 17 or 1$ in this country, and as albumen is only about 15$ solids, the price it is sold for in this country precludes our successfully competing with the foreign article. We might mention in concluding that our factory here in its sanitary arrangement was constructed at the suggestion of Dr. Pennington, the head of the Besearch Bureau of"the Pure Food Department, and it is generally regarded as one of the most modern and up to date food manufacturing establishments in the oountry. So you may rest assured that any goods that bears our brand are packed and prepared with the utmost observance of sanitary precaution. We note that you are about to publish a new volume on Camping and Woodcraft to appear along in the month of April, We shall certainly take pleasure in possessing ourselves with a oopy of this new publication as soon as it comes out.   • In a letter to Horace Kephart on February 23, 1916, National Bakers’ Egg Company responds to Kephart’s inquiries about ingredients used in their products. The company explains the whole evaporated egg is used instead of evaporated yolk. Likewise, dried albumen (dried egg whites, usually in powder form) is not used because they cannot compete with Russian and Chinese dried albumen prices. They also inform Kephart that their factory meets sanitation standards.
